1 lb. frozen tater tots
1/2 lb. diced Canadian bacon
1 - onion, chopped
1 - green bell pepper, chopped
1-1/2 cups shredded Cheddar cheese
1/4 cup grated Parmesan cheese
6 - eggs
1/2 cup whole milk
2 Tbsp. flour
salt and pepper

This delicious breakfast casserole recipe cooks overnight in your crockpot.
In 4-5 quart crockpot, layer ingredients in order: one third of the tater tots, bacon, onions, green peppers, and cheeses.
Repeat layers two more times, ending with cheeses.
In a medium mixing bowl, combine eggs, milk, and flour and beat with whisk or egg beater until combined.
Season with salt and pepper to taste.
Pour mixture over layers in crockpot.
Cover crockpot and cook on low for 10-12 hours.

Title: Steak and Gravy

4 beef cube steaks
S&P
1/4 cup all purp. flour
2 tbsp veg. oil
1 1/4 cups thinly sliced onion

Place a rack in center of oven and preheat oven to 300
Season steaks with S&P. Dredge in flour; Shake off excess.
Heat oil in a heavy cast iron/flameproof casserole/dutch oven or large skillet w/ lid over med-high heat.
Add the steaks and brown both sides 1 min. per.
Transfer steak to plate and add onion to heat over medium and cook stirring with wooden spoon until onion softens slightly, 1 minute.
Pour in 2/3 cup of hot water and stir to loosen up brown bits and bring mixture to a boil then turn off heat.
Place the steaks on top of liquid and onions and cover with lid.
Bake steaks until fork tender and liquid has thickened to gravy.
Serve with Rolls, Mac n Cheese and steamed broccoli.

12 oz skinless, boneless chicken breast, cut in pieces
3 cloves garlic
1 tbsp. EVOO
1 tbsp. hot chili powder
1 tsp. ground cumin
1 tsp crushed red pepper
2 14 oz cans chicken broth
1 cup chopped green onion
3 tbsp lime juice
1 tbsp chopped fresh cilantro
- - chopped avocado
- - S%26P
1 lg chopped tomato

Season chicken with s%26p. Cook chicken %26garlic in hot oil over med-high heat.
Stir in chili powder, cumin and red pepper.
Cook and stir for 30 seconds.
Stir in broth and onions.
Bring to boil; reduce heat. Simmer, uncovered for 10 min.
Remove from heat. Stir in tomato, lime juice, cilantro. Top with avocado.
Serves 4
